Introduction:

  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • 1/2 cup yogurt
  • 2 tablespoons ghee or vegetable oil
  • Fresh coriander leaves, for garnish
  • Fried onions, for garnish (optional)
  • Saffron strands soaked in milk, for garnish (optional)

Instructions:

  1. Preparing the Rice:
    • Rinse the basmati rice under running water until the water runs clear.
    • In a large pot, bring 4 cups of water to a boil.
    • Add the washed rice, cinnamon stick, cardamom pods, cloves, bay leaf, and salt to the boiling water.
    • Cook the rice on medium heat until it is 70-80% cooked, ensuring that the grains are separate and not mushy.
    • Drain the rice and set it aside.
    Sautéing the Vegetables:
    • Heat ghee or vegetable oil in a large pan or skillet over medium heat.
    • Add cumin seeds and let them splutter.
    • Add the thinly sliced onions and sauté until they turn golden brown.
    • Stir in the ginger-garlic paste and slit green chilies. Sauté for a minute until fragrant.
